Oatmeal Pie Fudge Bars
These oatmeal fudge bars are super fudgy, super easy, and VERY addicting. They are the ultimate crowd pleaser so make sure to make double.
Oatmeal Cookie Dough:
- 1 stick salted butter softened
- 1 cup light brown sugar
- 1 large egg
- 1 tsp pure vanilla extract
- 2 tbsp + 2 tsp whole milk
- 1 1/4 cup all purpose flour
- 1 1/2 cup quick oats
- 1/2 tsp baking soda
- 3/4 tsp salt
- 1/2 cup condensed milk (very full, almost overflowing)
- 1 cup semi-sweet chocolate chips
- 3 tbsp salted butter
- 1/2 tsp pure vanilla extract
Make the oatmeal cookie dough:
In a medium bowl, cream the butter and brown sugar.
Add the egg, vanilla, and milk.
Mix until light and fluffy.
Add the flour, quick oats, baking soda, and salt.
Stir until just combined.
Reserve 1 cup of oatmeal cookie dough and set aside.
Press the remaining cookie dough into the bottom and up the sides of the pie plate. The dough will be wet and sticky. Set aside.
Make the fudge filling:
In a small microwave safe bowl, combine the condensed milk, chocolate chips, butter, and vanilla.
Microwave on high for about one minute or until the chocolate chips and butter begin to melt.
Stir until the chocolate chips and butter are melted and a glossy, smooth fudge sauce forms.
Pour over the oatmeal cookie dough.
Finishing touches and bake:
Crumble the remaining 1 cup of oatmeal cookie dough randomly over the top of the fudge.
Bake for 20-25 minutes or until the top of the oatmeal fudge bars are a golden brown.
Remove from the oven and allow to sit for at least 30 minutes.
