Southwest Breakfast Burrito with Sweet Potato

This zesty breakfast burrito is taken to the next level with the addition of a surprising ingredient: sweet potatoes.

Ingredients
  

  • 2 medium flour tortillas
  • ½ cup salsa (or to taste)
  • 4 tablespoon shredded cheese (or more to taste)

Spiced Sweet Potatoes:

  • ½ medium sweet potato diced into small pieces
  • teaspoon salt
  • teaspoon chili powder
  • teaspoon cumin
  • pepper to taste
  • salt to taste

Eggs:

  • 4 large eggs
  • 2 tablespoon milk
  • salt to taste
  • pepper to taste

Instructions
 

Make the Sweet Potatoes

  • Fill a small sauce pan ⅔ full of water. Set aside.
  • Peel and dice the sweet potato.
  • Add the sweet potatoes to water.
  • Bring to a boil.
  • Boil the sweet potato until tender, about 8 minutes. Drain.
  • Sprinkle the chili powder, cumin, salt, and pepper over the sweet potatoes and stir to combine. Set aside.

Make the eggs

  • Next, beat the eggs and milk in a small bowl until well combined.
  • Heat a medium skillet over medium low heat.
  • Add the eggs, stirring slowly to scramble.
  • Add salt and pepper to taste. Stir well

Assemble the Southwest Burritos

  • Heat the tortillas for about 20 seconds in the microwave.
  • Top each tortilla with half each of the eggs, cheese, sweet potato, and salsa.
  • Wrap and enjoy!
